On Monday, September 21, Allô proudly partners with Etude Wines to bring you an unparalleled event. We have create a special menu to pair with Etude's flagship wines.
Just like the composer Chopin inspired Etude Founder Tony Soter and winemaker Jon Priest to perfect the winemaking "craft", so too Chef Eric Goldner was inspired to create this 5-course menu based on some of Chopin's famous Etudes:
First course: Sunshine
Grilled fruit and arugula salad, shaved parmesan, crispy Serrano ham, orange champagne vinaigrette
Wine pairing: Etude Pinot Gris
Second course: Revolutionary
Bone marrow popper, puff pastry, roasted bone marrow, Bordelaise, herb and greens
Wine pairing: Lyric Pinot Noir
Third course: Ocean
Roasted Halibut, seafood ramen broth, oyster mushrooms, rice noodles
Wine pairing: Etude Pinot Noir
Fourth course: Shepherd Boy
Lamb tagine, preserved lemon couscous, Harissa cucumber relish
Wine pairing: Etude Cabernet Sauvignon
Fifth course: Trois Nouvelles
Strawberry almond galette,
basil sabayon, guava sorbet
Wine pairing: Etude Pinot Noir Rosé
